Ingredients
  

  • Sweet Peppers: 6-8 sliced or halved; choose a mix of colors
  • Goat Cheese: 4 oz a soft, creamy variety
  • Olive Oil: 1-2 tbsp extra virgin for best flavor
  • Salt: To taste
  • Black Pepper: To taste preferably freshly ground
  • Fresh Basil or Parsley: A few leaves for garnish and added freshness
  • Balsamic Glaze optional: A light drizzle (for a sweet, tangy finish)

Method
 

Prepare the Peppers:
  1. Wash the sweet peppers thoroughly.
  2. Slice each pepper in half lengthwise, and remove the seeds and membranes.
Preheat the Oven (Optional):
  1. If you prefer a warm appetizer, preheat your oven to 375°F (190°C).
  2. If serving raw, skip this step.
Stuff with Goat Cheese:
  1. Spoon a generous amount of goat cheese into each pepper half.
  2. Spread the cheese evenly with the back of a spoon.
Season:
  1. Drizzle olive oil over the stuffed peppers.
  2. Sprinkle with salt and freshly ground black pepper.
Garnish:
  1. Top with torn fresh basil or parsley leaves for added color and flavor.
Bake (Optional):
  1. For a warm version, place the peppers on a baking tray and bake for 8-10 minutes until the cheese softens slightly.
  2. Remove from the oven and let cool for a couple of minutes before serving.
Finish:
  1. Add a light drizzle of balsamic glaze over the top just before serving for an extra touch of sweetness and tang.
