Method
Prepare the Peppers:
- Wash the sweet peppers thoroughly.
- Slice each pepper in half lengthwise, and remove the seeds and membranes.
Preheat the Oven (Optional):
- If you prefer a warm appetizer, preheat your oven to 375°F (190°C).
- If serving raw, skip this step.
Stuff with Goat Cheese:
- Spoon a generous amount of goat cheese into each pepper half.
- Spread the cheese evenly with the back of a spoon.
Season:
- Drizzle olive oil over the stuffed peppers.
- Sprinkle with salt and freshly ground black pepper.
Garnish:
- Top with torn fresh basil or parsley leaves for added color and flavor.
Bake (Optional):
- For a warm version, place the peppers on a baking tray and bake for 8-10 minutes until the cheese softens slightly.
- Remove from the oven and let cool for a couple of minutes before serving.
Finish:
- Add a light drizzle of balsamic glaze over the top just before serving for an extra touch of sweetness and tang.
